Ingredients
— 200g block feta
— 2 medium tomatoes, thickly sliced
— 1 green Italian pepper, sliced into rings
— 1 red chili, thinly sliced
— 2 garlic cloves, thinly sliced
— 2 tbsp extra-virgin olive oil
— 1 tsp dried oregano
— Black pepper
Prep
— Preheat oven to 400°F.
— Slice tomatoes thickly.
— Slice pepper into rings.
— Slice chili and garlic.
Method
— In a small oven-safe dish or clay pot:
— Layer tomato slices on the bottom.
— Place feta block on top.
— Arrange pepper rings and chili over the feta.
— Scatter garlic.
— Drizzle olive oil over everything.
— Sprinkle dried oregano.
— Crack black pepper.
— Bake at 400°F for 20–22 minutes.
