Ingredients

— 2 oz gin
— 1 oz vodka
— 1/2 oz Lillet Blanc
— 1 bar spoon honey syrup
— Lemon twist
Prep
— Make honey syrup: combine equal parts honey and warm water, stir until dissolved. Store in a small bottle.
— Chill a coupe glass.
Method
— Combine all ingredients in a shaker with ice.
— Shake for 12 seconds.
— Double strain into the chilled coupe.
— Express the lemon twist and rest it on the rim.
Chef's Note: Greek thyme honey makes this exceptional. The honey rounds out the gin's botanicals without making it sweet — just smoother.
