Ingredients
— 1.5 cups almond flour
— ½ cup whole almonds, roughly chopped
— ½ cup all-purpose flour
— ½ tsp baking powder
— ½ tsp cinnamon
— Pinch of ground cloves
— Pinch of salt
— ⅓ cup honey
— ¼ cup olive oil
— 1 egg
— Zest of 1 orange
— Extra honey for brushing
— Flaked almonds for topping
Prep
— Preheat oven to 350°F.
— Line a baking sheet with parchment.
Method
— Mix all dry ingredients in a bowl.
— In a separate bowl whisk honey, olive oil, egg, and orange zest.
— Combine wet into dry.
— Mix until a soft dough forms.
👉 If too sticky, add a tbsp of flour. If too dry, add a tsp of honey.
— Roll tablespoon-sized pieces into ovals or rounds.
— Place on lined baking sheet.
— Press a few flaked almonds into each.
— Bake at 350°F for 14–16 minutes.
— You're looking for:
— Light golden edges
— Firm to the touch
— Not browned — these are pale, not dark
— While still warm, brush with a thin layer of honey.
— Cool on a rack.
