Small sesame bread rings — the street food of Thessaloniki, sold from carts since the Ottoman era.
Ingredients
— 2 cups all-purpose flour
— 1 tsp instant yeast
— 1 tsp sugar
— ½ tsp salt
— ¾ cup warm water
— 2 tbsp olive oil
— 1 cup sesame seeds
— 2 tbsp honey dissolved in ¼ cup warm water
Prep
— Mix flour, yeast, sugar, and salt.
— Add warm water and olive oil.
— Knead until smooth — 8 minutes.
— Cover and rest 30 minutes.
— Preheat oven to 400°F.
Method
— Divide dough into 16 pieces.
— Roll each into a rope — 15cm long.
— Form into rings, pinch ends to seal.
— Dip each ring in honey-water.
— Roll in sesame seeds.
— Press seeds firmly.
— Place on lined baking sheet.
— Bake at 400°F for 18–22 minutes.

— Deep golden brown
— Sesame toasted and fragrant
— Firm and crispy
— Cool on a rack.
— Best eaten warm but they keep well for 2 days.
