— Or crumble roughly if it breaks — both work.

— Slice bread and brush lightly with olive oil.
Method
STEP 1 — TOAST THE BREAD
— Toast bread slices under broiler or in a dry skillet.
— Cook until golden and crisp on both sides.
— You're looking for:
— Crispy surface
— Still slightly soft inside
STEP 2 — TOP
— Lay cheese slices or crumbles on warm toasts.
STEP 3 — FINISH
— Drizzle honey over each piece.
— Scatter thyme or oregano.
— Crack black pepper generously.
— Optional: scatter walnuts.
— Serve immediately.
Chef's Note: Ladotyri is one of Greece's great overlooked cheeses. If you can find it, use nothing else. The oil cure gives it a depth no substitute matches.
