Whole figs preserved in fragrant syrup. The Lesvos spoon sweet — served with coffee, with cheese, or simply alone.
Ingredients

— 1 kg small fresh figs, firm and not fully ripe
— Juice of 1 lemon
— 2 cups sugar
— 1.5 cups water
— Juice of 1 lemon
— 1 cinnamon stick
— 3 whole cloves
— 1 tsp vanilla extract
— Optional: 2 tbsp rose water at the end
Prep
— Trim the stem end of each fig — leave figs whole.
— Pierce each fig 4–5 times with a toothpick.
— 👉 Piercing allows the syrup to penetrate the fruit.
— Place figs in a large bowl.
— Cover with cold water and the juice of 1 lemon.
— Soak 30 minutes — firms the flesh.
— Drain and pat dry.
Method
— In a wide, heavy pot combine:
— Sugar
— Water
— Lemon juice
— Cinnamon stick
— Cloves
— Bring to a boil, stirring until sugar dissolves.
— Reduce to a steady simmer.
— Add figs to the simmering syrup.
— Cook uncovered on medium-low heat for 45–60 minutes.
— You're looking for:
— Figs translucent but holding their shape
— Syrup thickened enough to coat a spoon
— Drop test: a drop on a cold plate should set, not spread
👉 Do NOT stir — gently swirl the pot to keep figs from breaking.
— Add vanilla and rose water if using.
— Cook 2 more minutes.
— Remove cinnamon and cloves.
— Pour into sterilized jars while hot.
— Seal immediately.
— Store in refrigerator once opened.
