Ingredients
— 1.5 cups all-purpose flour
— 1 tsp baking powder
— 1 cup warm water
— 1 tsp honey
— ½ tsp salt
— Savory: 2 tbsp fresh herbs (mint, dill, oregano), ½ tsp dried mastiha powder
— Sweet: 1 tbsp honey in batter, serve with extra honey and cinnamon
— Vegetable oil or light olive oil for frying
— Thick Greek yogurt

Prep
— Mix flour, baking powder, and salt in a bowl.
— Add warm water and honey.
— Whisk until smooth — batter should be thick but pourable.
— Like pancake batter consistency.
— Add herbs or mastiha if going savory.
— Rest batter 10 minutes.
— Pour oil into a wide pan to 1.5cm depth.
— Heat to 175°C / 350°F.
— 👉 Test with a drop of batter — it should sizzle immediately and rise to the surface.
