Ingredients
— 300g graviera cheese, sliced 1.5cm thick
— ½ cup all-purpose flour
— 1 egg, beaten
— ½ cup breadcrumbs or sesame seeds
— 3 tbsp thyme honey
— 1 tbsp sesame seeds, toasted
— Fresh thyme sprigs
— Olive oil or vegetable oil for frying
Prep
— Slice graviera 1.5cm thick.
— Pat dry.
— Place in freezer for 10 minutes.
— 👉 Cold cheese holds its shape better in the pan. Room-temperature cheese can burst.
— Three shallow bowls: flour → beaten egg → breadcrumbs/sesame.
Method
— Dredge each slice: flour → egg → breadcrumbs.
— Press breadcrumbs firmly.
— Return to plate.
— Heat olive oil in a skillet to medium-high.
— Oil should be 0.5cm deep.
— Test with a breadcrumb — it should sizzle immediately.
— Fry cheese slices 2 minutes per side.
— You're looking for:
— Deep golden crust all around
— Cheese starting to ooze at the edges
— Do NOT move until crust has formed.
— Transfer immediately to serving plate.
— Drizzle with thyme honey.
— Scatter toasted sesame seeds.
— Add fresh thyme sprigs.
— Serve immediately.
