Honey puffs with sesame and cinnamon. The Mykonos street food — made at the harbor, eaten standing up.
Ingredients
— 2 cups all-purpose flour
— 1 tsp instant yeast
— 1 tsp sugar
— 1 cup warm water
— Pinch of salt
— ½ cup honey, warmed
— 2 tbsp sesame seeds, toasted
— Ground cinnamon
— Vegetable oil for deep frying
Prep
— Mix flour, yeast, sugar, and salt.
— Add warm water and stir to a sticky, wet batter.
— Cover and rest 1 hour until bubbling and doubled.
Method
— Pour oil to 4cm depth.
— Heat to 175°C / 350°F.
— Drop small spoonfuls of batter into hot oil.
— Fry in batches of 8.
— Cook 3–4 minutes, turning occasionally.
— You're looking for:
— Deep golden all over
— Puffed and round
— Remove with slotted spoon.
— Drain briefly.
— Pile into a bowl.
— Drizzle warm honey.
— Scatter sesame seeds.
— Dust with cinnamon.
— Serve immediately.
Chef's Note: Loukoumades need to be eaten immediately. They deflate and soften within minutes. Have your guests waiting, not the loukoumades.
