Ingredients
— 600g fresh spinach, roughly chopped
— 200g feta cheese, crumbled
— 2 eggs, beaten
— 1 small onion, finely chopped
— 3 spring onions, sliced
— ½ cup fresh dill, chopped
— ¼ cup fresh parsley, chopped
— 2 tbsp olive oil
— Salt
— Black pepper
— Pinch of nutmeg
— 🥐 PASTRY
— 10–12 sheets phyllo pastry
— ½ cup olive oil or melted butter for brushing
Prep
— Wilt spinach: sauté in olive oil or blanch briefly.
— Squeeze out ALL excess liquid — this is critical.
— 👉 Wet filling makes soggy pastry. Squeeze the spinach until no more water runs out.
— Mix spinach with feta, eggs, onion, spring onions, dill, parsley, nutmeg, salt, and pepper.
— Preheat oven to 375°F.
